Mmm, More French Toast

Here is an Autumnal stuffed french toast variation:

Pumpkin Butter stuffed french toast with cooked apples

Here is another use for that awesome Trader Joes Pumpkin Butter!  I used it just like I would the preserves with the cream cheese in the center of the french toast sandwich.  In the custard I put cinnamon and nutmeg.

The cooked apples were super easy.  Dice a braeburn apple or any firm apple (braeburns are sweet so you really don’t need to add much, or any sweeteners), you don’t have to peel it if you are lazy like me, and throw the pieces into a glass measuring cup.  Add to the apple pieces some vanilla, a tsp or two of margarine or butter, agave syrup, cinnamon, nutmeg, cloves, and cardamom.  Pop it in the microwave on high for a minute or two, you may need to cover it just in case, and voila!  You have cooked apples in syrup!

It’s so nice to have a hearty and warm breakfast this time of year!
